Lotus seeds · What to buy
Taiwan FDA recommends intact packaging and evenly coloured seeds. Avoid dark spots, unnatural darkening, clumping or unusual smell. Check that the food is lotus seed, and whether it is fresh, dried and de-cored; green embryo information is separate.
Lotus seeds · Cleaning before cooking
Before cooking, inspect and rinse sound food seeds with clean water. Rinsing does not rescue mouldy seeds: Taiwan FDA says removing visible bad pieces or washing may not remove contamination extending into other parts. Discard an abnormal batch.
Lotus seeds · Keeping dry, fresh and cooked forms
Keep lotus seeds cool and dry; Taiwan FDA recommends sealing unused portions and refrigerating or freezing to reduce moisture and mould risk. Buy only what you can use soon and inspect regularly. Discard mouldy, discoloured or off-smelling seeds rather than trimming and boiling them.
